She worked as a mentor and advisor to staff of the Ministries of Health in Cambodia and Lao PDR over a 15 month period to plan, implement and evaluate projects aimed at improving rural household food safety practices. The community-based intervention studies involved training of village health volunteers in Cambodia, and Lao Women's Union representatives, to observe rural household food safety practices, identifying high risk food handling practices/behaviours, and developing targeted food safety messages and information materials for community education.

A success story. The projects in both Cambodia and Lao PDR were successful in highlighting major food safety and hygiene problems in rural village households, raising community awareness about the importance of safe food handling practices and improving household food safety behaviours. A key outcome of  this work was development of a model process for expanding food safety education in rural communities of Cambodia and Lao PDR.                                                                                                                                                               Preparing riverweed, Vang Vieng, Laos
